Fall Treat

Oh how I love the fall season! Anything remotely related to pumpkin is right up my alley. So when I found this recipe I knew I couldn't go wrong! I mean.. Pumpkin Pie + Cheesecake? Sounds like a win-win recipe to me. I will share:


Pumpkin Cheesecake Bars:
15oz Pumpkin Pie Filling
14oz sweetened condensed milk
3 eggs
1tbsp vanilla
8oz cream cheese, softened
1 16oz pound cake mix
2tbsp butter, melted
1tsp cinnamon

Preheat oven to 350
Spray a large jelly roll pan w/ nonstick spray. Mix cake mix, cinnamon, 1 egg and melted butter in a bowl. Press into greased jelly roll pan.Beat cream cheese until fluffy. Pour in sweetened condenssed milk. Mix until smooth. Add in eggs, pumpkin pie filling, vanilla. Mix well. Pour onto crust. Bake for 30-35 min or until set. (I left minenin for 40 just to be sure the center was done). Cool on rack then refrigerate atleast 1 hr.



I want to make these again but put a dollup of whipped cream or pastry pride on top. These one however were getting transported so the whipped cream would have been a mess rather than a pretty topping.
